Candy Bar Swirl Cookies

Candy Bar Swirl CookiesAfter all the fruit recipes I’ve been cramming down your throats lately I thought it was high time we had some chocolate happening around here. There’s definitely more fruit to come (sorry… not sorry) but one of my favorite summertime indulgences is movie theater JUNK. When it’s too hot to do anything but turn off the lights, crank the a/c, and have a giant bowl of popcorn. Or sour gummies. Or fun size candy. Junior mints anyone? Movie theater junk is a total treat.

We have a limit on Xbox/computer games/electronic brain rotting stuff (which is pretty ironic since my job requires me to be all up in my computer all day– unless I’m all up in the kitchen… with the computer) because otherwise these boys would go from the computer to the Xbox to the computer to the Xbox and I’d have to be Annoying Mommy that yells, “Go outside!!! Be children!! Get dirty! Pleeease!”

Candy Bar Swirl Cookies

I don’t like to be Annoying Mommy.

But I can be. So anyway, there is a timer. The timer presents a whole other set of problems and Kristan totally gets it – in fact her solution is pretty awesome – but I suspect with TWO BOYS instead of one, I may die if the zombies take over my TV for more than the allotted time. That means the timer stays. And every couple of days my guys watch a movie. Not that movies aren’t brain-rotting, they’re just a different kind – a kind I can get down with more than say… Minecraft.

Candy Bar Swirl Cookies

This week they watched Thor. I actually have no idea what inspired that selection. But I do know that they were waaaaay into it. And so I made movie snacks — cookies full of CANDY. I’m even pretty sure I could smuggle a rather large batch of these into an actual movie theater in my purse.

I definitely managed to mail a baker’s dozen to Danielle in New York because … hey hey these are Leftovers Club Cookies!! I was partnered this month with Dining with Dani and she was suuuuuch a great food-in-the-mail friend. She made me some over the top rainbow cookies that took her like 44675658 hours to make and so I wanted to make sure I sent her something super happy even though 85865475435 hour long recipes are not my thing. I found these donuts on her site (and since we are discussing movie junk I think you really need to take a minute to gaze at the awesomeness that are 3 Musketeers Donuts) so I decided that candy bar cookies were the way to go.

Serves: 4 dozen cookies
Ingredients
  • Chocolate Cookie Dough:
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 teaspoon vanilla
  • 1 egg
  • 1 cup all purpose flour
  • ½ cup + 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons milk
  • 6 fun size 3 Musketeer bars cut into cubes
  • For the Vanilla Cookie Dough:
  • ¾ cup unsalted butter, at room temperature
  • ¾ cup brown sugar, packed
  • ½ cup granulated sugar
  • 1 tablespoon vanilla
  • 1 egg
  • 2 cups all purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • ¾ teaspoon kosher salt
  • 2½ cups of your favorite candy bars, chopped (I used Snickers, Twix,, and Mini Reese's)
Instructions
  1. Make the chocolate cookie dough. In a large bowl beat the butter and sugars until fluffy. Add the vanilla and egg and beat until just combined. Dump in the flour, unsweetened cocoa powder, baking soda, and salt. Start the mixer on low and gradually increase the speed to medium high until the dough comes together scraping down the sides halfway through. Add the milk a tablespoon at a time.Stir in the 3 Musketeer pieces. The dough will be damp and sticky.
  2. Wrap the dough tightly in plastic wrap (I shape mine into a little log) and refrigerate for 2 hours or overnight.
  3. Make the vanilla cookie dough. Beat the butters and sugars in a large bowl until fluffy. Add the vanilla and egg and beat until the dough is just combined. Toss the flour, cornstarch, baking soda, and kosher salt into the bowl. Start with the mixer on low speed and gradually increase the speed to medium high, scraping down the sides once, beating until the dough comes together. Stir in the candy bar pieces.
  4. Wrap the dough tightly in plastic wrap and refrigerate for 2 hours or overnight.
  5. Pre-heat the oven to 350. Line a baking sheet with parchment paper (this keeps the candy pieces from sticking).
  6. Pinch off a piece of the chocolate cookie dough (about ¾ inch ball). Pinch off a 1 inch piece of the vanilla dough. Roll the two halves in your hand to form a half chocolate half vanilla ball.
  7. Place them on the prepared baking sheet about 2 inches apart.
  8. Bake for 9-10 minutes.
  9. Let the cookies cool slightly before removing to a wire rack to cool completely.
Notes
While the cookies are baking I go ahead and form as many two-toned balls of cookie dough as I can and I lay them on a parchment paper lined plate and stick them in the freezer. This keeps the dough cold even after you work with it and COLD DOUGH BAKES BETTER COOKIES.

I was just thinking today that I am thrilled with how little tv and Wii our kids have played this summer! But I know when the weather turns, I will have to break my out my timer too. My son is the worst! And while they are in the basement playing games I will munch on these delicious cookies!

I soooooo understand this post. We have six boys, four of them are ages 10 and under. Can you say Minecraft toxicity? If I could just understand what it is all about, I may feel better about their obsession - although I seriously doubt it. Speaking of serious - these babies you put together in this post look seriously addictive. I have a very tough time resisting temptations like these, it seem I can't ever, "Just say No." To that end, Danielle is one lucky lady to be getting these delivered to her door!

6 boys? I just fell out in the floor. Do you have 6 jobs to feed them? Because I have 2, Chad has 1, and I think we definitely need a couple more just to feed these monsters. All I can say is MAKE THESE COOKIES. You will feel better. And the boys will leave you alone. For awhile anyway. There is also no logical explanation for Minecraft. The only good thing about it is that it does not get stuck in your foot like a Lego.
