Peach Berry Crumble

Fresh peaches, strawberries, and blueberries are baked under a crumbly brown sugar and oatmeal topping. Served with a big scoop of ice cream this Peach Berry Crumble makes a perfect summer treat!
Ingredients
  • Fruit Filling:
  • 4 cups fresh ripe peaches, peeled and sliced
  • 1½ cups fresh strawberries, hulled and sliced
  • 1½ cups fresh blueberries or blackberries
  • 1½ tablespoons granulated sugar
  • 1 tablespoon all purpose flour
  • pinch of salt
  • Crumble Topping:
  • 1 cup old fashioned oats
  • ½ cup packed light brown sugar
  • ¼ cup all purpose flour
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons softened butter
Instructions
  1. Preheat the oven to 375°F and butter a 9 X 9 baking dish (8 X 8 works too. Or a pie plate).
  2. Toss the peaches and berries with the 1½ tablespoons granulated sugar, 1 tablespoon flour, and pinch of salt. Spread the mixture evenly across the prepared pan.
  3. In a large bowl combine the oats, brown sugar, flour, cinnamon, and salt. Add the butter in with your fingers to form a coarse crumbly topping.
  4. Spread the topping over the fruit and bake for 25-30 minutes. The topping will be golden and the fruit will be bubbly.
  5. Serve warm {with ice cream!!}.
