Fresh peaches, strawberries, and blueberries are baked under a crumbly brown sugar and oatmeal topping. Served with a big scoop of ice cream this Peach Berry Crumble makes a perfect summer treat!
Ingredients
Fruit Filling:
4 cups fresh ripe peaches, peeled and sliced
1½ cups fresh strawberries, hulled and sliced
1½ cups fresh blueberries or blackberries
1½ tablespoons granulated sugar
1 tablespoon all purpose flour
pinch of salt
Crumble Topping:
1 cup old fashioned oats
½ cup packed light brown sugar
¼ cup all purpose flour
½ teaspoon cinnamon
¼ teaspoon salt
6 tablespoons softened butter
Instructions
Preheat the oven to 375°F and butter a 9 X 9 baking dish (8 X 8 works too. Or a pie plate).
Toss the peaches and berries with the 1½ tablespoons granulated sugar, 1 tablespoon flour, and pinch of salt. Spread the mixture evenly across the prepared pan.
In a large bowl combine the oats, brown sugar, flour, cinnamon, and salt. Add the butter in with your fingers to form a coarse crumbly topping.
Spread the topping over the fruit and bake for 25-30 minutes. The topping will be golden and the fruit will be bubbly.
Serve warm {with ice cream!!}.
