Once upon a forever ago I started a food blog on the internet and filled it full of really solid recipes but actually gave my readers no guidance in the body of the posts.

Seriously though.

I often cook from my own site and so I pull up old recipes on my phone from the kitchen. This was one of those times. I knew I had most of the things to make these Chili Spiced Hasselback Potatoes, so I pulled this up to check myself and was literally mortified at the body of the text.

So I took the time to re-shoot the recipe and am jumping in on July 1, 2018 (this was originally published on November 6, 2012) to actually walk you through the cooking instead of telling you what I made Chad for lunch today. I’m so embarrassing.

Prepping Chili Spiced Hasselback Potatoes

Hasselback Potatoes are basically just fancy baked potatoes. You scrub the potatoes down and then slice them reeeeeeally thin.

But not all the way through. Just enough so that you are left with what’s basically a potato accordion.

How to Make Hasselback Potatoes

The great thing about these potatoes: You can make a whole bunch OR you can make just one. That makes this recipe optimal for nights when you are just feeding one or two. Not much work, all the delicious.

[back to original 2012 text for a sec] I made 4 to have with veggie burgers for dinner, and Andrew must have REALLY liked his because he asked me 3 times, “Hey… are there any more of those potatoes?”

I’m still buried under a pile of work, BUT!! I can promise you a couple of things for the coming days: gingerbread pancakes and the story about how a Black Widow spider almost killed me AND Norma Jean yesterday morning. So stay tuned.

In the meantime rub these potatoes with olive oil and chili spice, bake ’em, melt cheese on ’em, and eat.

Chili Spiced Cheesy Hasselback Potatoes

Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes

Chili Spiced Hasselback Potatoes are sliced into thin little accordions, rubbed with homemade chili spice, and covered in cheese!

Ingredients

  • 4 good baking potatoes, thoroughly scrubbed (I used these pretty Idaho potatoes)
  • olive oil for rubbing the skin of each potato (maybe a teaspoon per potato, plus a little more to go in between the slices)
  • 4 teaspoons cornstarch
  • 4 teaspoons chili powder
  • red pepper flakes to taste (I like spice!! I used 1/2 teaspoon)
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 2 teaspoons spicy grill seasoning (I like McCormick Grill Mates Montreal Spicy Steak Seasoning)
  • 1/2 cup cheese, divided (1/8 cup per potato)
  • green onions to garnish (AND sour cream if you like!!)

Instructions

  1. Pre-heat the oven to 400.
  2. Slice your potatoes as shown in the photos; turn each potato horizontally in front of you and using a very sharp knife make as many little vertical cuts as you can manage, creating a row of very thin slices. BE CAREFUL NOT TO CUT ALL THE WAY THROUGH!! When you’re done each potato will look kind of like an accordion.
  3. Rub the potatoes all over with olive oil and use your fingers to rub in between the slices, while doing your best not to break the potatoes (but if you do, don’t fret. Just place them back together when you’re ready to bake).
  4. Mix together the cornstarch, chili powder, red pepper flakes, cumin, and garlic powder.
  5. Shake the grill seasoning (about 1/2 teaspoon per potato) over the potatoes.
  6. Rub the potatoes with the spice mixture.
  7. Drizzle just a little more olive oil over each potato so they’ll brown and crisp at the edges.
  8. Place the potatoes on a baking sheet or baking dish. Bake for about 40 minutes.
  9. Take the potatoes out of the oven, sprinkle them with the cheese, and then put them back in the oven for 3-5 more minutes, just long enough to melt the cheese.
  10. Garnish with the green onion slices and sour cream.

WHAT!!! I am so mad right now...I thought you hadn't blogged in days I was starting to wonder what was going on!!! The page I saw was strawberry muffins and cheez-its...none of these were on there!!!

Moving on...YUM!!! Dude I love that sliced potato look that's awesome!!! Did you seriously cut those by hand??? If so, you got some knife skills girl because it looks like it was professionally cut in some special potato slicer machine thing haha Potatos and cheese and spices sign me up!!! If I was Andrew I'd be asking for seconds too hahahaha Yup I definitely want one of these!!!!!!! Like now hahaha

Yes. I seriously cut the potatoes by hand. You can too!! No knife skills are really required. Just an ACTUALLY sharp knife so you don't lose any digits. These were a really great alternative to blah baked potatoes and they required NO BUTTER! And because of the grill seasoning there's not any additional salt. Chad was sort of upset with me though, because he says the potato in the photos looks much more cheesy than the ones I served as a meal. I think he thought he got cheated out of cheese lol
