The Best No Bake Spinach Dip

  • 1 tablespoon olive oil
  • 4.5 ounces fresh spinach, very finely chopped
  • 2 cloves garlic
  • pinch of salt
  • 1 cup plain Greek yogurt
  • ¼ cup low fat sour cream
  • 1 tablespoon red wine vinegar
  • ¼ - 1.3 cup crumbled feta cheese
  • crushed red pepper to taste
  1. Heat the olive oil in a medium skillet. Add the spinach and cook, stirring occasionally, for about 3 minutes.
  2. When the spinach has cooked down, add the garlic. Stir and cook until translucent and fragrant (careful not to burn! Over-cooked garlic tastes bitter).
  3. Remove the skillet from the heat and stir with the remaining ingredients until smooth.
