Famous Peanut Butter Pie

A creamy cooked peanut butter filling baked into the most lovely [and famous!] peanut butter pie. This pie is best when refrigerated before serving so I like to make it the day before I need it.
Ingredients
  • 1 prepared chocolate pie crust (9-inch)
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • 2½ cups Silk Cashewmilk
  • 2 egg yolks, lightly beaten
  • ⅔ cup creamy peanut butter
  • 1 tablespoon unsalted butter or solid coconut oil
  • ½ teaspoon kosher salt
  • 1 teaspoon vanilla
  • 8 ounces non-dairy whipped topping
  • Peanut Butter Chocolate Hearts, chopped Peanut Butter Cups, and/or Chocolate Shavings to garnish
Instructions
  1. Preheat the oven to 325F.
  2. In a medium to large saucepan, whisk together the sugar and cornstarch. Pour in the cashew milk and the egg yolks, and gently whisk to combine. You want to bring the heat up slowly, stirring constantly. You will gradually increase the heat to medium high. Keep stirring until the mixture comes to a boil.
  3. Remove it from the heat. Stir in the peanut butter, butter, kosher salt, and vanilla until smooth.
  4. Pour the filling into the pie crust.
  5. Bake for 23 minutes. Cool completely on a wire rack.
  6. Cover the pie with the non-dairy whipped topping, garnish with the peanut butter hearts and chocolate shavings.
  7. Refrigerate until you're ready to serve.
