Chocolate Banana Bundt Cake

Ingredients
  • 2 cups all purpose flour
  • ¾ cups granulated sugar
  • ¾ cup dutch process dark unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup 2% milk
  • 2 medium bananas, mashed
  • 1 cup hot water
  • For the Fudge Frosting:
  • 3 tablespoons heavy cream
  • 1 cup semi sweet chocolate chips
Instructions
  1. Preheat the oven to 350 and grease a 10-inch bundt cake
  2. In a large bowl whisk together the flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Make a small well in the center of the dry mixture and add the eggs, milk, and mashed bananas.
  4. Mix until combined.
  5. Gradually add the hot water stirring until incorporated, about 2 minutes.
  6. Pour the batter into the prepared pan and bake for about 40 minutes or until a pic inserted into the center comes out clean.
  7. Let the cake cool in the pan for at least 10 minutes (20 -30 is better!) before inverting onto a plate or cake stand to cool completely.
  8. When the cake is cooled make the fudge frosting. Heat the cream in a small saucepan. Remove it from the heat and pour it over the chocolate chips. Let it sit for just a minute and then stir until smooth. Spread the fudge frosting across the top of the cake.
