Cereal Crunch Chocolate Peanut Butter Cookies

Ingredients
  • 1 cup all purpose flour
  • ½ teaspoon baking soda
  • 1 stick unsalted butter, softened to room temperature
  • ⅔ cup granulated sugar
  • ⅓ cup packed light brown sugar
  • ⅓ cup creamy peanut butter
  • 1 egg
  • ½ teaspoon vanilla
  • 1 cup semi-sweet chocolate chips
  • 2 cups Rice Krispies or other crisped rice cereal
Instructions
  1. Pre-heat the oven to 350. Butter a baking sheet.
  2. In a small bowl whisk together the flour and baking soda. Set aside.
  3. In a large bowl beat together the butter and sugars until fluffy, about 2 minutes.
  4. Blend in the peanut butter.
  5. Add the egg and vanilla. Blend until the egg is just combined.
  6. Beat in the flour/baking soda.
  7. Stir in the Rice Krispies and chocolate chips.
  8. Roll the cookie dough into 1½ inch balls, and place them on the prepared cookie sheet spaced about 2 inches apart.
  9. Bake for 8-10 minutes.
  10. Cool the cookies for 2-3 minutes before removing them to a wire rack to cool completely.
