Honey Chipotle Lime Baked Wings

Ingredients
  • 2 pounds chicken wings, skin on
  • ¼ cup honey
  • 2-3 chipotle peppers in adobo sauce* *see note**
  • 1-2 tablespoons adobo sauce
  • 1 tablespoon low sodium soy sauce
  • juice of ½ a fresh lime or about 2 teaspoons of lime juice
Instructions
  1. Using a very sharp knife, separate the wingettes from the drummettes at the joint. Trim the tips off the wings.
  2. In a large stock pot or dutch oven bring about an inch of water to a boil. Place the wings in a steamer basket, put the basket over the boiling water, and cover. Steam the wings for 10 minutes.
  3. Remove the wings from the basket, pat them dry with paper towels. Lay them out in a single layer on a plate or another baking sheet, cover with paper towels, and refrigerate for an hour.
  4. Pre-heat the oven to 425 and spray a baking sheet with non-stick cooking spray.
  5. Discard the paper towels and place the refrigerated wings in a single layer on the prepared baking sheet.
  6. Bake for 20 minutes, flip them over, and bake for 20 minutes on the other side.
  7. While the wings bake, make the sauce by putting the honey, chipotle peppers, adobo sauce, soy sauce, and lime juice in the blender. Blend until smooth.
  8. Toss the baked wings with the sauce and serve hot or cold- these are great either way.
Notes
**If you like the smoky flavor of these peppers but aren't into the heat, cut them down the middle and scrape out the seeds. More peppers/more seeds = more heat**
