BLT Sliders with Cucumber Dill Sandwich Spread

  • 1 cucumber, peeled, seeded, and shredded (with a grater)
  • 2 tablespoons plain Greek non-fat yogurt
  • 2 tablespoons light sour cream
  • 1 tablespoon light mayonnaise
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon olive oil
  • 12 whole wheat dinner rolls
  • 1 pound of bacon, cooked and drained on paper towels
  • 4 cups mixed salad greens
  • 2 cups thinly sliced tomatoes
  • salt & pepper to taste
  1. Wrap the shredded cucumber in a clean cloth and squeeze all the water out of it. Place the cucumber in a medium bowl.
  2. Add the plain Greek non-fat yogurt, sour cream, mayonnaise, and dill. Stir to combine.
  3. Drizzle in the olive oil and stir again.
  4. Slice the dinner rolls in half and spread each half with the sandwich spread.
  5. Layer each sandwich with bacon, mixed greens, and tomato slices.
  6. Salt and pepper to taste.
