Well. It happened.

We went straight from using the heat to needing the air conditioner with like one day of transition in between which kind of sucks because all I really wanna do is leave the windows open and stop paying the power company. This must be why people live in California.

It's absolutely perfect outside-- I actually couldn't ask for better Carolina blue skies, a slight breeze, and loads of sunshine. But!

We live INSIDE the house and after 2 or 3 in the afternoon it's like an oven in here. Maybe I'll practice Bikram yoga in my living room.

Or maybe I'll just spend the next 4 months finding new ways to eat fruit and ice cream.

That sounds more my speed.

Every time I see the little display in the grocery store full of strawberry cartons, those little spongy shortcake cups, and that weird red saucy stuff that seems like it should need to be refrigerated but it's definitely not (does anyone actually buy that stuff? What is it?! I feel like this is important.) I start craving strawberry shortcake. And whenever I make strawberry shortcake I have this moral dessert dilemma where I feel like I want to have ice cream with it but I think I'm supposed to have whipped cream. Which one is it? I vote both.

Ingredients
  • 2 cups flour
  • 3 tablespoons sugar, plus more for sprinkling
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold butter
  • 1 egg, plus one lightly beaten egg white (for brushing the shortcakes)
  • ½ cup + 2 tablespoons fat free buttermilk
  • 2 heaping cups of vanilla frozen yogurt
  • 4 ounces fresh strawberries, hulled and halved
  • 1 - 1/12 cups milk
  • whipped cream
Instructions
  1. Pre-heat the oven to 425.
  2. In a large bowl whisk together the flour, 3 tablespoons of sugar, baking powder, and salt.
  3. Using a grater, grate the cold butter into the bowl and then mix with your fingers until coarse crumbles form.
  4. In a small dish (I like to use my liquid measuring cup), lightly beat together the egg and the buttermilk. Add it to the bowl and stir/fold with a sturdy spatula until just combined (Careful not to overwork the dough! That will make your shortcakes tough instead of tender.).
  5. Turn the dough out onto a floured surface and gently knead it into a ball. Pat the ball out to about ¾" thick. Cut the dough using a small biscuit cutter (OR whatever you have handy). The size is really your preference but larger will change the bake time. I cut mine into about 1½" circles. Place your shortcake cut-outs onto an ungreased baking sheet about an inch apart (just crowd 'em on there- they don't spread out much).
  6. Brush the tops of the shortcakes with the beaten egg white and then sprinkle with sugar.
  7. Bake for 7 minutes (more for larger shortcakes), remove from the baking sheet, and let them cool completely (I ended up with about 28 little shortcakes).
  8. To make the milkshakes, add 2 cups of the frozen yogurt to the blender. Toss in the strawberries and 1 cup of the milk. Blend until combined. Add 3 of the shortcakes (3 if you went small) and a little more of the milk if needed.
  9. Blend.
  10. Top with the whipped cream and additional shortcake crumbles if desired.

  2. Oh this looks just luscious. I just got back from my parents' home in Kerala and it is sweltering. When we were little, my cousin and I used to blend rocky road ice cream with chocolate chip cookies and make a milkshake. Smashed up shortcake in a milkshake is a stroke of genius.

    1. It really is gorgeous here. The skies are the bluest blue. It's awesome (before it gets unbearably hot). Milkshake weather!!!

  4. Mmm, strawberries! Strawberries are one of my weird food things though - I love strawberries, but really don't like strawberry flavoured things or strawberry milkshake/yoghurt/mousse/ice cream etc. etc.... I don't understand it either! When I was little, I remember begging my mum to buy Crusha milkshake stuff (ie a load of artificial flavours, colours and god knows what mixed into some sugar to make a strawberry syruppy stuff that you put into milk for milkshake) - this was a definite win for the advertisers, because even then I didn't like strawberry milk...and guess what I hated it, so this bottle of crusha sat in our cupboard forever getting stickier and yukkier by the day!

      Okay so I'm weird about MILK. I actually can't stand milk. But I love dairy products. Give me all the cheese, yogurt, and ice cream. I'll splash it on my cereal and that's it. Even chocolate can't save milk in my book. But I love milkshakes. I like mine more thick and ice creamy though so that's my justification.
      Skip the shakes and just make the shortcakes!

  7. Ha! I wish we could turn of the ac... That baby has to run all year round.. We only got about 5 cool days in Miami this year. By cool i mean high of 70. =(

    Anyways, this shake looks amazing!!! This is brilliant!

    1. Oh my gosh. I could never handle living farther south than I do. I think I would melt. Milkshakes are in order!!!

  8. Moral dilemma solved! Have both ice cream & whipped cream.....now let's tackle that red, gooey, saucy-stuff.
    This looks so goooood....too cold here in Alberta (25-yikes!), but saving for when it warms up.

  11. I see the biscuit cutters are coming in handy - so glad! Are those berries even sweet? The imports here are not. Our crop is almost ready to harvest and I'm betting they won't be sweet either due to the extended cold. I think that red stuff is corn syrup, red food coloring, and some kinda fake strawberry flavor. I haven't had it either...lets keep walking past it, shall we?

The strawberries by themselves were not so sweet (though my mom ALWAYS manages to find sweet strawberries no matter what time of year; it's like a secret talent) but with the frozen yogurt in the shakes they were great! I planted strawberries this year. We'll see how that goes, huh?

  12. Hi Heather, I can totally relate with the weird weather. It has been raining for over 3 weeks straight in HK and on one day day, just before the rain, it was so hot had to run the aircon as it was so humid that the floors were so slippery and wet, that you would wipe out. Your little strawberry shortcake shake is just the cold blast cure for those hot and muggy days. Love those photos!
