First day of school! First day of school!

Wherrrrrrrre did my summer go? Today it's back to sharing my early mornings with the fellas, reminding them to hang up towels, brush their teeth, and eat some breakfast.

I mean, we do all those things in the summer, but they do them at like 11 am instead of 6. This day is a rude awakening.

When the boys were small I used to leave for work at like 5:45 in the morning. We had this crazy amazing babysitter that showed up at our house at the crack of dawn. She'd get them ready for school, double check back packs, and sometimes she'd make them a really quick pancake breakfast that they much preferred to my fancy choices of cereal. She was a dream babysitter, really.

Back then I always made sure we had a box of that good 'ol Aunt Jemima Just Add Water! It was the early morning pancake jam. And really, with a pancake-making-sitter at 5:45 am, can you ask for more than mix + H2O?

The answer is NO. No you can't.

So I tried, you guys.

I tried sososo hard to come up with a homemade mix you could just add water to. Then I tried to maybe just add milk?

But with every batch of mix I was getting these flat-instead-of-fluffy pancake fails. If we're keeping it real, Aunt Jemima is not very fluffy either.

And I like pancake fluff.

So this mix is an amazing delicious fluffy pancake compromise:

1 cup mix + 1 cup milk + 1 egg = 4-6 freaking delicious fluffy pancakes

Breakfast is served!!!! These mix up in less than 1 minute and cook in less than 5. BAM.

If you are fancy you will use buttermilk (so gooood).

If you are more fancy you will add a handful of fruit.

This easy homemade mix turns out THE BEST, fluffiest pancakes! Homemade Fluffy Pancake Mix makes breakfast simple - just add an egg and milk!

Ingredients

  • 6 cups all purpose flour
  • ¼ cup granulated sugar
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Instructions

  • Whisk together all ingredients thoroughly and store in an airtight container.
  • To make the pancakes, simply mix together 1 cup of the mix + 1 cup of milk + 1 egg (¾ cup fresh fruit is optional and delicious!). Heat a nonstick skillet or pancake griddle and butter it. Pour the batter onto the hot griddle about ¼ cup at a time. When the top of each pancake bubbles, flip and continue cooking on the second side. Each cup of mix will yield 4-6 pancakes.

  1. I don't know what I did wrong. My first pancake was flat as a sheet and then the others I made smaller but they are definitely not as fluffy as your pictures :-(. The only thing I did different was added good coloring to make a rainbow. They were delicious!!

  2. I have been using this recipe for about a year now and it is always a hit with my friends! It's also awesome because you can change it up with fruit, or cinnamon, and even pumpkin spice during the fall season! My one friend even adds almond extract to her batches!

    So overall this is a great recipe and now a staple in my house!

  3. These pancakes are amazing! I have been complemented on a buttermilk pancake recipe I've used for years, but this recipe far surpasses my old one. The only changes I made were using buttermilk and adding 1 tsp of vanilla. I made a half batch this morning before my family got up just in case the recipe wasn't as good as expected. I ate the whole batch myself!! Good thing all I have to do is mix up another one. Hope you have more recipes to share.

  5. Haven't made it yet because i get frustrated after a fail, i just tried Jim's fluffy pancakes and they were gross. However i do have a couple questions, i tend to use alot of cashew milk and was also wondering if there is a recommendation on sugar substitute as we are on a sugar free diet and not replacing with a chemical sweetener.

    1. Cashew milk is the problem. It's much heavier than regular dairy milk, so the results are going to be different.
      I don't use sugar substitutes, so I definitely can't help there! You might be better off here with a dairy and sugar-free recipe that has already been tested with those variables.

    2. @Monique Korte, I have used an old family recipe very similar to the above recipe and it containes sugar. I personally do not add the sugar or any substitutes and the pancakes still turn out great. I use regular milk or Buttermilk.

  6. LOVE this: 4-6 freaking delicious fluffy pancakes! These cakes are at the least twice as tall as any of the others and very light. I so very grad I found this recipe due the cost savings for me!!!

  7. These are some of the flattest pancakes I’ve ever had and tastes like egg. Try adding more mix instead of just one cup.

    1. @Tessa, I know. I used only about 3/4 cup of milk and they still were not very fluffy. Plus they were kind of bland. Added a little bit more salt, vanilla, and cinnamon to the batter, as well as some chocolate chips and they were a little better.

  9. These were very good. I added blueberries. They weren’t very sweet though. How much of a sweetening agent can I add to the mix? I don’t necessarily want to add more sugar, and I’m not a very good cook/Baker. So I don’t even know what I could use to sweeten it a bit.
    (We don’t do any type of artificial sweetener).

  10. I have been baking gluten free for 4 years now. I hadn't yet tried to make pancakes yet - but have made most everything else: cake, cookies, banana bread. Today I got a craving for pancakes and found this recipe. I substituted my favorite GF flour for regular flour. Viola! They turned out fantastic! It was super easy too. I added a couple drops of vanilla to my first batch. Yummm!!!
