First day of school! First day of school!

Wherrrrrrrre did my summer go? Today it's back to sharing my early mornings with the fellas, reminding them to hang up towels, brush their teeth, and eat some breakfast.

I mean, we do all those things in the summer, but they do them at like 11 am instead of 6. This day is a rude awakening.

When the boys were small I used to leave for work at like 5:45 in the morning. We had this crazy amazing babysitter that showed up at our house at the crack of dawn. She'd get them ready for school, double check back packs, and sometimes she'd make them a really quick pancake breakfast that they much preferred to my fancy choices of cereal. She was a dream babysitter, really.

Back then I always made sure we had a box of that good 'ol Aunt Jemima Just Add Water! It was the early morning pancake jam. And really, with a pancake-making-sitter at 5:45 am, can you ask for more than mix + H2O?

The answer is NO. No you can't.

So I tried, you guys.

I tried sososo hard to come up with a homemade mix you could just add water to. Then I tried to maybe just add milk?

But with every batch of mix I was getting these flat-instead-of-fluffy pancake fails. If we're keeping it real, Aunt Jemima is not very fluffy either.

And I like pancake fluff.

So this mix is an amazing delicious fluffy pancake compromise:

1 cup mix + 1 cup milk + 1 egg = 4-6 freaking delicious fluffy pancakes

Breakfast is served!!!! These mix up in less than 1 minute and cook in less than 5. BAM.

If you are fancy you will use buttermilk (so gooood).

If you are more fancy you will add a handful of fruit.

The fanciest people will give this stuff away as fun gifts in jars with cute crafty labels that I have no idea how to make.

Oh you crafty people... I wish I were cool like you.

This easy homemade mix turns out THE BEST, fluffiest pancakes! Homemade Fluffy Pancake Mix makes breakfast simple - just add an egg and milk!

Ingredients

  • 6 cups all purpose flour
  • ¼ cup granulated sugar
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Instructions

  • Whisk together all ingredients thoroughly and store in an airtight container.
  • To make the pancakes, simply mix together 1 cup of the mix + 1 cup of milk + 1 egg (¾ cup fresh fruit is optional and delicious!). Heat a nonstick skillet or pancake griddle and butter it. Pour the batter onto the hot griddle about ¼ cup at a time. When the top of each pancake bubbles, flip and continue cooking on the second side. Each cup of mix will yield 4-6 pancakes.

  1. You know when you have a taste for something and no substitute will do? Well, I am a long time user of boxed-just-add-water pancake mix and yikes! we were out. Your recipe came to my rescue for our late night supper and it was delicious. Used the Magic Bullet to mix the milk, egg and vanilla (can you say easy?) & added to the dry ingredients. I also sifted the ingredients twice and the batter was lovely. Had to keep thinning the batter with extra milk which is typical of a pancake batter. Excellent recipe; a real keeper! Thank you for sharing.

      1. I just thought I would mention after reading about the water sub. I didn't do that but I have been using Soya milk as my children are allergic to dairy and it works just fine 🙂 Maybe slightly less fluffy but not by much at all. It is still one of the most requested foods from them 🙂

  4. Just tried these.To much baking powder for me.I can taste the baking powder in them. Do not like that. Will use about half the next time i make them.

    1. Hey Carl! Thanks for the feedback! I nearly always use a 1/2 tbsp baking powder : 1 cup flour ratio with pancakes but if you could taste it that's understandably no good! You might whisk the dry ingredients a little more and that might help, but if you change the measurements to something you think works a little better be sure to let us know! 🙂

      1. Mine came out flat. Like the flattest ever. Maybe I overmixed the batter or didn’t let them sit long enough to bubble up and create volume. Batter was mega runny. I thoroughly incorporated the baking powder into the dry mix.

        1. Hey Saasy -- did you check the date on your baking powder? That's usually the culprit. That much baking powder + eggs means that it should be fluffy because science. If it's not then there's something affecting the chemistry of the ingredients. Hope that helps!

      I USED: Rice milk because of dairy issues.worked well. even subbed some ww.flour I make small ones

  8. Have you tried a trick my mother taught me? If your recipe calls for eggs that don't require separating and beating (and you don't have any) sub each egg with a tablespoon each of custard powder and milk. Coz, you know...custard is made from eggs.

    Perhaps if you added 6 tablespoons of custard powder to the jar then all you'd have to add is a dash more milk?

    1. I have not tried custard powder, Sharon but that is a terrific idea!! If you try it let me know! I did try powdered egg whites (like what I use for royal frosting on cookies) and they were not fluffy like this. Thank you so much!

    1. I wish I had a waffle iron! I have never tried it because I don't have the equipment, but I don't see why it wouldn't work! If you need thicker batter, use a little less milk. Thinner batter add a little more milk. The pancake mix basically works like the box mixes - you can easily adjust the liquid : mix ratio to get your result. If you try it let us know how it works!
