First day of school! First day of school!

Wherrrrrrrre did my summer go? Today it's back to sharing my early mornings with the fellas, reminding them to hang up towels, brush their teeth, and eat some breakfast.

I mean, we do all those things in the summer, but they do them at like 11 am instead of 6. This day is a rude awakening.

When the boys were small I used to leave for work at like 5:45 in the morning. We had this crazy amazing babysitter that showed up at our house at the crack of dawn. She'd get them ready for school, double check back packs, and sometimes she'd make them a really quick pancake breakfast that they much preferred to my fancy choices of cereal. She was a dream babysitter, really.

Back then I always made sure we had a box of that good 'ol Aunt Jemima Just Add Water! It was the early morning pancake jam. And really, with a pancake-making-sitter at 5:45 am, can you ask for more than mix + H2O?

The answer is NO. No you can't.

So I tried, you guys.

I tried sososo hard to come up with a homemade mix you could just add water to. Then I tried to maybe just add milk?

But with every batch of mix I was getting these flat-instead-of-fluffy pancake fails. If we're keeping it real, Aunt Jemima is not very fluffy either.

And I like pancake fluff.

So this mix is an amazing delicious fluffy pancake compromise:

1 cup mix + 1 cup milk + 1 egg = 4-6 freaking delicious fluffy pancakes

Breakfast is served!!!! These mix up in less than 1 minute and cook in less than 5. BAM.

If you are fancy you will use buttermilk (so gooood).

If you are more fancy you will add a handful of fruit.

The fanciest people will give this stuff away as fun gifts in jars with cute crafty labels that I have no idea how to make.

This easy homemade mix turns out THE BEST, fluffiest pancakes! Homemade Fluffy Pancake Mix makes breakfast simple - just add an egg and milk!

Ingredients

  • 6 cups all purpose flour
  • ¼ cup granulated sugar
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt

Instructions

  • Whisk together all ingredients thoroughly and store in an airtight container.
  • To make the pancakes, simply mix together 1 cup of the mix + 1 cup of milk + 1 egg (¾ cup fresh fruit is optional and delicious!). Heat a nonstick skillet or pancake griddle and butter it. Pour the batter onto the hot griddle about ¼ cup at a time. When the top of each pancake bubbles, flip and continue cooking on the second side. Each cup of mix will yield 4-6 pancakes.

    1. Hi Carly! Hm. I have never had any issues with this recipe and all the reviews have been great. I'll ask the first, most obvious silly question -- did you use baking soda or baking powder? The baking powder is responsible for most of the lift in this recipe. Let's figure that part out and trouble shoot some more from there.

  2. Want to add a little extra zing to you pancakes depending on what fruit you use like blueberries try adding a little lemon extract to your batter sure makes them smell wonderful.

  3. What temperature should these be cooked at? I have an issue with cooking pancakes too hot, where the outside burns so fast...even when given a specific temp! Am i preheating too early?

    1. Hi Brook! Okay so I have a few questions for you: Are you cooking on the stove? Or do you use an electric griddle? Do you have a nonstick surface? Or are you using stainless steel skillets?
      I write A LOT of pancake recipes, and I test them in various ways, but when I publish, my instructions usually apply to a nonstick surface, either stovetop or griddle. Stainless steel will require a little more practice, finesse, and butter 🙂
      On the electric griddle, I set the knob to 375F or 400F. The stove can be tricky -- especially electric stoves! I find that my electric stove cooks REALLY hot. So if you are cooking on an electric stove, you'd probably do better to start at a lower temperature (try medium instead of medium high) and then raise it if you feel like you can. Also! It helps to do a test pancake first. My first pancake never has the pretty golden brown color I want. It's usually too light or too dark, and I adjust from there.
      I hope this helps a little. Let me know if you have any further questions!

  5. So great! I've used whole wheat and hard red winter wheat flour to make these, and they came out great. I've also made them with substitutes: buttermilk, almond milk, some mix thereof and cream, as well as with a flax seed "egg" (2 tbsp water, 1 tbsp ground flaxseed). I just use whatever happens to be in the fridge and cabinets, and they still come out deliciously (though I must confess, the almond milk & flax seed egg in combination with whole wheat flour made them a bit more dense, but still lighter than other recipes I've used - I was surprised at how much even these fluffed up! I added bananas and blueberries to this morning's batch. I usually end up adding so much fruit that I get eight medium+ pancakes out of 1 cup of mix: perfect for me & my hubby.

Almond milk always goes wonky for me with things that need a little leavening though. If you are looking for a good dairy-free substitute maybe try so milk? I like it with french toast and it's a little creamier. Enjoy!

  6. This sounds like a great idea. I don't like pancakes often or very many when I do, so something I can make a very small batch of is perfect!
    I wonder if you used the powdered eggs and powdered buttermilk if you'd then be able to just add water??? I may give that a try, especially if you could maybe make muffins from it (putting together lots of ideas from commenters and maybe making too big a leap of faith ;).

  7. Hey I just made these and they were as flat as a piece of paper??? Anyone have this problem and figure it out??

    1. Make sure you are using fresh ingredients sounds like your Baking Powder is bad assuming you measured everything accurately?

    2. Yes, they were way too thin. If you measure according to the directions, you'll be measuring liquid in a liquid measuring cup=more liquid to dry measure. I used a dry measuring cup the second time and only put 3/4 c milk and they turned out MUCH BETTER. The liquid content is way too high.

      1. Hey Lori -- don't measure in a liquid measuring cup. MIX in a liquid measuring cup. The problem wasn't the recipe lol.

    3. Hello! My pancakes were also a bit flat...compared to other mix I've tried in the past. The first time with almond milk. Today, with Skim milk. Skim resulted in a fluffier pancake (but still not as big as author's picture). I'll keep trying... Thank you for the premix. This will help my teens make it themselves without my help.

      1. Hi Leslie! Almond milk is REALLY heavy which is why you got flat pancakes. It's ideal for drinking but can really affect the chemistry of baking and cooking, especially with things that require a rise. I have done A LOT of work with brands like Silk, and all my almond milk recipes require major adjustments. I use 2% but skim should be just fine. Thanks for the feedback!

  9. Have you tried using the powdered eggs and buttermilk. I like a hint of vanilla so powdered there also.I use the powdered buttermilk all the time. So many recipes only call for a little and the rest ended up being unused. Can't stand waste.

    1. I have not tried this with powdered eggs or buttermilk. If you decide to try it I'd love to know how it turns out! I don't usually have trouble making it through my buttermilk stash, but I cook A LOT, so that helps.

  12. These are absolutely the BEST pancakes ever. My family LOVES them. I didn't have any buttermilk, do I made my own using regular milk and white vinegar. I also also substituted a 1/4 cup of the milk for applesauce. I will NEVER use a box mix again. Thanks for such an awesome recipe.

  13. hi there.! I love the idea of making this pancake mix that you shared..but i have one question though..can i put water instead of milk.? I plan to have this mix when i get to visit my mom and sister..but we only have powdered milk in our local stores..getting a fresh milk in the city would take 5-8 hours of drive..and one thing do i have to put the whole egg in the mix.? or just the white.? i havent tried making up any of these..im sorry for the funny questions i have..thanks a lot..

    1. Hi Xam -- I have NO IDEA what using water versus milk will do here -- especially since I usually use buttermilk instead of regular milk. I'd say go ahead and mix up the powdered milk with water according to those package directions and try that. And yes -- this recipe calls for the whole egg. Not just egg whites. Eggs are part of the reason the pancakes turn out so fluffy. I hope these tips help! Good luck and happy breakfasting!
