Note: This recipe dates back to 2013! But it's still one of my favorite breakfasts. So I have added some new photos and am sharing it again, for those of you that haven't been hanging around that long. 

I can't think of anything better on a cold morning than a cozy bowl of oatmeal. I think that stovetop recipes can get a bad rap - they really don't take more than a few minutes. You can still get breakfast on the table (or in a to go cup) quickly, and the possibilities are basically endless. 

This apple cinnamon oatmeal is my current favorite. 

Fresh apples, apple pie spice, just a little brown sugar, and old fashioned oats. You can have a hearty, happy, warm, delicious breakfast in less than 10 minutes.

I think it's time for a Lucy update.

She is my snuggly little companion. She is smart and sweet and might be the laziest puppy ever.

I was sifting through some blog things today and I noticed that I might be a pretty slack Lucy mama because I never updated my "About"page to include her. Oops.

So here she is...

She really is a doll.

Like any puppy she has a few issues, but nothing major. Mostly she just doesn't like to be left alone. Ever. At all. She's not the greatest car rider either. She adjusts. And then readjusts. And then she fusses a little. And then she drools.

This morning I drove Evan to school. So we brought Lucy with us. We were completely engrossed in this puzzle game that Chad put on my phone while we waited in the neverending line of non-moving vehicles. We weren't really paying attention when it was time for Evan to get outta the car. Evan leaped out...

...annnnnd so did Lucy.

Evan exclaimed, "Oh no!, Lucy!!," and then took off running after her.

Fortunately Lucy wasn't trying to run away. She was just really excited about all the little kids and she was really sick of sitting in the car.

I had this brief flash of me having to leap out of the car to chase my puppy down. Just so we're clear about my carpool attire, it consists of a sports bra under a tank top, a pair of sweat pants, flip flops, a mop of curly disaster hair, and a cup of coffee glued to my hand. I was majorly relieved that I did not have to exit the vehicle.

Apple Cinnamon Oatmeal Recipe

Oh morning.

I eat oatmeal at least 3 mornings a week. It's basically perfect. You can dress it up or dress it down. You can make it taste like your favorite dessert. You can add fresh fruit, dried fruit, nuts, CHOCOLATE! Oatmeal is amazing.

This homemade apple cinnamon oatmeal really never fails me. Lots of good heart-healthy fuel for when you might need to chase a puppy across a school parking lot.

Ingredients

  • ½ tablespoon unsalted butter
  • 1 medium crisp apple, about 1 ½ cups diced
  • 3 tablespoons honey (OR 2 tablespoons brown sugar), plus a little more to drizzle over the finished oatmeal
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • pinch of salt
  • 2 cups water
  • 1 cup old fashioned oats (or gluten free oats!)
  • ½ cup chopped walnuts (optional)
  • ½ cup milk (optional)

Instructions

  1. In a medium saucepan, melt the butter over medium high heat. Add 1 cup of the apples, the honey or brown sugar, and sprinkle in the spices and salt. Cook for 2-3 minutes until the apples are softened.
  2. Pour in the water, turn the heat up to high, and bring to a low boil. Add the oats and reduce the heat to medium/medium high. Cook, stirring occasionally for 3-5 more minutes.
  3. Add the walnuts (if using), and continue cooking until most of the liquid is absorbed. Divide the oatmeal between two bowls, sprinkle each with the remaining apples, drizzle with a little more honey, and splash ¼ cup milk into each bowl.

  3. Heather your recipe was alright, but you really need to learn to handle negative feedback better.

    I get that it's your personal blog, but it's also one of the first recipes that comes up when searching for "apple cinnamon oatmeal". Yes, most people skip past the blog, because they're annoying (this is why most food blogs have a "jump to recipe" button at the top) to a lot of people.

    Obviously you have a lot of followers that enjoy reading your blog, but I'm 100% sure that most people that see your recipe skip your blog entirely and just don't bother commenting; which is why it seems to you that there's more interest in your blog than there is. So you can't really get mad at a couple of people commenting about that.

    You're also the first recipe blog I've seen that personally attacks commenters that didn't like the recipe. It's the internet; you need thicker skin if you are going to put yourself out there, I'm sorry...

      You don't know the first thing about me or how thick my skin is, and maybe just maybe instead of expecting people to "toughen up" when it comes to completely irrelevant commentary, you could just - here's a though - NOT LEAVE ANY. Or be kind. I don't think that is too much to ask when I have paid for this space for 11+ years.

  4. This was not good at all. I was hopeful with all of the good reviews but we all hated it. The creator attacking people in the comments isn’t a good vibe either. 0/10, don’t bother with this.

  5. I love this recipe it's easy and tastes good. And! This has been the only oatmeal I have been able to get my autistic son to eat!! Food has always been a struggle for him, so I am so grateful for this recipe

    1. @Sydney, i kept it over night, it was great cold and i reheated it the second time, also good. but i tend to have a strange taste bud thing so it could just be me.

  9. This was pretty good. I try to not keep brown sugar in the house because then I just bake all the time... but for this recipe, brown sugar would’ve been way tastier than honey. Also, I think next time I would just use a pinch of fresh ginger. Overall, pretty decent/good.

  10. Made this recently & it was very tasty. I was looking for something a little different than just throwing the apples & spices in part way through cooking. For the cooks who like to use milk - this recipe & many like this that use water - it is creamy enough not to use milk especially if you use a good quality of oatmeal. Just top off the dish with some at the end, my husband prefers no added milk, but I like it. I also used real maple syrup as the sweetener. I don't know if this recipe site has a Bananas Foster recipe, but found that is good too, for a change. Thanks for the recipe Heather.

  12. I was excited to try this recipe and usually read comments before I start to see if there are any decent tweaks or notes. I can't believe how u responded to someone asking to skip the blog for the recipe. Quite rude and pointing out it was only 2 people amongst your thousands of readers was upsetting also. I won't click on your blogs from this point forward. Very sad that you can't handle a slight critique.
