So I'm on kind of a breakfast kick lately. Which should actually come as no surprise to you since I do not try to hide the fact that I am basically in love with breakfast. Pizza, burgers, tacos, cake, and bourbon are all acceptable.
Anything goes in the morning! Especially if you #putaneggonit

Earlier this week we made Hawaiian Overnight Oats because sometimes mornings are cah-rayzayyy. And today I have these Make Ahead Breakfast Bakes!
These are easy and totally customizable -- you're gonna love 'em.

I peeled and then shredded a big baking potato with the help of a few of my favorite KitchenIQ tools (you can click to see my Potato Tool Review and this V-Etched Container Grater that I use every day of my life), put 'em in a muffin cup, and then added a few of my favorite veggies, a little cheese, and some lightly beaten eggs.

These things freeze well and microwave easily. Or they are great if you need to like... feed a soccer team at a 7 a.m. game or ward off hungry children at a sleepover.

You can get really creative with the flavor profiles here, just like you can with any omelet or egg dish.
Instead of the tomato + pepper + onion + cheddar you could try...
- diced tomato + onion + spinach + feta
- broccoli + cheddar
- bacon + spinach + cheddar jack
- mushrooms + onions + baby swiss
- ham + your favorite cheese
- crumbled sausage and cheddar

Hi Liz! I don't have a microwave either!! I haven't tried heating these from frozen in the oven; I'm sure it will work but you will definitely have to play around with time and temperature to give you a crispy Breakfast Bake. One thing I KNOW works is the toaster oven (though I no longer have one of those either). Favorite method? Skillet on the stove with a little bit of water in the bottom of the pan. The water breaks the thaw and helps to heat it through. Then the bottom gets a little crisp once the water evaporates.

I will be reheating about 100 of these so a microwave won't work. How do you suggest reheating them? I have plenty of oven space and roaster ovens at my disposal.

Sure can! It will probably adjust the baking time a bit so keep an eye on things.
If I wanted to take these camping what would be the best way to heat them up???

How long do they last in the fridge for?
Hey Emily - these are fine for a couple of days. Things don't last that long in my house so I am actually not sure. I'd say fridge for a couple of days and past that freeze 🙂
Could you use frozen hash browns instead of a freshly peeled potato?

How long should you microwave these
Hi Aleah! I don't have a microwave, and also - they are all different! It will also depend on if your bakes are refrigerated or frozen! Try to use the guide on the actual microwave to give you clues.
I've made a recipe like this in the past but have never used the potatoes. I microwaved frozen ones for about 20-30 sec on the top and 20-30 sec on the bottom.
