Christmas Morning Casserole
A super simple casserole made with refrigerated biscuits, eggs, cheese, and bacon. Christmas Morning Casserole is perfect for long lazy mornings with family and friends.

It is not a holiday in our house without a breakfast casserole. It's like an unwritten rule that a savory hot breakfast that can be dipped out with a huge serving spoon must be on the table.
We also love Giant Cinnamon Rolls, Chocolate Kahlua Doughnuts and fresh fruits.
But if there is a breakfast casserole you can be assured that everyone will go for that first. And for all the variations -- the hash browned layers or the custardy stratas --
THIS ONE, this Christmas Morning Casserole, is my most favorite.
It's also the easiest to make, but we'll get to that in a minute.

Why we love Christmas Breakfast Casserole
It's fitting that Christmas morning gets its own casserole, right? I think it is totally a day that needs specially designated food. Besides a ham dinner, the hot chocolate, and all the wine, first thing Christmas morning is totally begging for is a tradition food, and for me this is SO it.
This will be our first Christmas in this house and I am even more excited than normal. For so many years we scraped and struggled, for so many years we spent Christmas morning on the cold floor in our crappy little house, giving and smiling and surprising and photographing, all the while holding out and working hard towards a warm cozy space that's our own.
I feel like we seriously paid our dues, and am so thankful to finally have my family under a roof that feels like a home.
I'm thankful we have someplace my boys can have sleepovers. I'm thankful we have the space to offer refuge to all the stray dogs that inevitably cross my path. I am so so thankful to have a bright space to work and create in a job I so completely love, and that that job has made life comfortable for my sweet understanding boys.
This casserole will be a part of our new Christmas tradition- a twist on something sort of old that is working it's way into our new history-in-the-making. Just like this house.

How to make Christmas Casserole
To make Christmas Morning Casserole you'll need:
- refrigerated biscuits
- eggs
- milk
- cheese
- bacon
- green onions
Cook the bacon ahead to your desired crispness. Drain on paper towels.
Cut the refrigerated biscuits into quarters.
Beat the eggs and then toss everything into a large bowl and toss to coat.
Be sure your baking dish is coated with nonstick cooking spray, and then bake.
Casserole Variations
It's so easy to make this your own by ...
- swapping the bacon for sausage
- or cubed ham
- adding bell peppers and onions
- or leaving out the meat and going for blistered tomatoes and spinach for a vegetarian twist
Basically, if you think it would be delicious in an omelet it'll be awesome in this casserole.
I originally made this for my friends at Food Fanatic where I write about breakfast twice a month. You should probably check it out lest you miss something like Sweet Potato Cinnamon Rolls with Candied Bacon.
Feeding a crowd? Try these!
- Bacon Spinach Breakfast Casserole is one of my most popular recipes ever! It's strata-style with cubed bread, fresh spinach, and loads of bacon.
- Ham and Egg Brunch Cups are the perfect pick up breakfast or brunch made with puff pastry, ham, eggs, and cheese!
- Crescent Roll Breakfast Bake is similar to this casserole in that it calls for refrigerated crescent rolls. then you pour eggs and cheese over the crescent rolls and bake it all up.

Can you make this this night before and refrigerate it
Sure can!!
How would I convert this recipe to a 2"full commercial pan?
Jill - I would at least double it. I prepare something like this all the time in 2" hotel pans. The only problem I've had is if I made to much and it takes forever to cook in the middle. It eventually gets cooked just be patient.
Heather,
This is just what I was looking for. The presentation is beautiful, and it tastes so yummy! I served it for the first time today, and I am happy to agree with you, this will be our new Christmas tradition as well!

I had an early Christmas for my little brothers this year when I had them for my weekend.on our Christmas "eve" I made the big dinner so Christmas morning I used the left over ham to make this. I just cubes it up and tossed it in their and also cooked a few sausages to put in their as well. I added two more eggs than what was needed but it turned out great! Huge hit.
Aw thanks for the feedback, Alesha! Ham sounds terrific! Merry Christmas!
Hi, Can this be made without bacon or sausage?

I have never made it ahead! But I honestly don't think it will hurt anything 🙂 The refrigerated biscuits will still be refrigerated!

Oh boy does this look good! I love breakfast casseroles for the holidays, or anytime really!
Thanks Bobbi! We do, too!!
Can you make this the night before and cook it in the morning?
Sounds delicious. I bought the ingredients and want to make it ahead....I'm sleep wimpy too!
Hi Abananie! I have never tried it, but!!! Since you are using refrigerated biscuits I think that as long as you keep it refrigerated you should be okay. It's super simple to make. I'd definitely cook the bacon ahead of time and cut up the biscuits. You could either mix it up and refrigerate it unbaked overnight OR you could prep everything the day before (like cooking and crumbling the bacon, cutting the biscuits) and then mixing up everything to bake the morning of. It's so low maintenance I think as long as it's cold it'll be just fine. But let me know how it goes so I can pass it along next time someone asks, ok? Have an awesome holiday!
Your casserole would feed my family so well 😀
It looks so full and delicious!
Cheers

Yay for your first Christmas in your house! I totally understand what you mean by finally having a place you can call home and feel comfortable in. It feels like we've moved around so much and sacrificed a lot and now finally feel like we found a place we love, too. I'm so happy for you! You deserve it! And this casserole. Wow. I've been searching for something yummy to make Christmas morning and I think I just found it! Pinned!
Thank you so much Jen! You are so sweet! We are so thankful to be in this place. I hope you and your family have the happiest holiday in your home!
Do you think Tater Tots or hash browns would work in this as well?
Hey Deb - possibly? WITH the biscuits? I'd need more details on your idea to help you work it out. Let me know what you are thinking of doing!
I used both in mine. Used the hash browns as a "crust". I've got a crowd, and it needed to be more substantial.
Uhhhmaziiinnnng! mine came out EXACTLY like your pic! Beautiful! this will now be a go to for our family breakfasts. Thanks!
Hi Nita!
So glad to hear it!
